
- 1 oz. Old Lahaina Light Rum
- 1 oz. Old Lahaina Dark Rum
- 1/2 oz. macadamia-nut orgeat
- 1/2 oz. Marie Brizard Orange Curaçao
- 3/4 oz. fresh lime juice
- 1/2 oz. honey
- 1 oz. liliko‘i purée
- 1 oz. simple syrup
- 1 oz. egg whites
- 1.5 oz. cold water
This is the drink thirsty pirates swim to shore for on Maui🏴☠️🍹...and then they climb the hill to Monkeypod Kitchen at the entrance to Wailea! There are a couple of unique twists to this libation, and we're not talkin' the pineapple slice on top. One is macadamia nut orgeat in the mix. But the first taste of heaven you will likely notice is the liliko'i in the foam. We have duplicated this at home to perfection, though it took a lot of tries with more than willing adults 😲. We used a NO2 whip cream dispenser to create the foam, but you can also whip the foam ingredients- just make sure all ingredients are chilled first. The results of this receipe are a perfect combo of sweet and tart.
